We had the chance to drop in at the Uptown Metropolitan Market a few weeks back as part of their continuing 10-year celebration of their location at the foot of the Queen Anne hill.

On this particular evening, we sampled the pairings of bites created by the Metropolitan Market culinary professionals and several of the Pike Brewery’s offerings, including the seasonal Pike Vita’s Blonde Coffee Ale, a Metropolitan Market exclusive release.

I was concerned about beer tasting as I am much more of a whiskey kinda gal and I didn’t want to do any disservice to the generous invitation. I was very pleasantly surprised and delighted with the depth of flavor and smooth taste of Pike’s Blonde Coffee Ale. It was a perfect taste companion for the Metropolitan Market’s bites. The cheese sauce featuring Pike Brewery’s Kilt Lifter Ruby Ale brought immediate thoughts of an inspired version of mac and cheese for a winter’s evening.

Kilt Lifter Cheese Sauce
Recipe Type: Sauce
Author: Pike Place Brewing and Uptown Metropolitan Market
Ingredients
  • 4 tbsp unsalted butter
  • 4 tbsp flour
  • 1/2 cup Pike Kilt Lifter
  • 1/2 cup milk
  • 8 oz. Irish Cheddar, shredded (or substitute Beecher’s Cheese)
  • 4 oz. cream gouda, shredded
  • 1/4 cup stone ground mustard
Instructions
  1. Melt butter on medium heat until foamy, then add flour, whisking to remove any lumps and cook 1/2 minutes until it becomes lightly browned
  2. Slowly whisk in beer and milk, and turn heat to low. Stir until mixture begins to thicken.
  3. Add in cheese and mustard, and stir until smooth. If the mixture is too thick, add a little move milk.

This Saturday, December 10th, the Uptown location is hosting a tasting event from 1-4pm. ‘Taste of Metropolitan Market: Leg of Lamb Dinner’ with a sampling rotisserie lamb and a full host of delicious sides.
