Family-owned Nutty Squirrel and Fainting Goat, which have been working in tandem behind the scenes for nearly 10 years to deliver an authentic, Italian Gelateria experience recently announced the two generations of families will join forces and launch a new pastry line, creating a collection of five Seattle-area neighborhood Pasticerrias.

In addition to the menu of gelato, espresso and tea, each of the five cafes will serve European Pasticceria-style sweets such as panna cotta, tiramisu, profiteroles, macarons and fresh baked pastries, all made with the same commitment to authenticity. Pastry flavors will rotate in the same fashion as the gelato, showcasing both classic and seasonal flavors. From the production facility and shop in Magnolia, these flavor-forward sweets will be delivered fresh to each store.

“We are passionate about our art,” said Gelato Master Tolga Seymen. “That’s why we are thrilled with the opportunity to grow our offerings, and ultimately translate the traditional techniques we’ve honed in our gelato recipes, into the new and seasonal bakery collection.”
“Our family’s love affair with gelato has evolved and grown over the years we’ve been in operation,” said Sevim Ataman, founder and chef of Fainting Goat Gelato. “We will each continue to operate under the Nutty Squirrel and Fainting Goat Names to communicate our commitment to each community, but customers will know they can find the same flavors and experience throughout each of the five locations.”

Traditional and trendy, the flavors change with the seasons and the selections at the counter rotate on the regular. Find fresh baked croissants daily alongside traditional and creative baked goods and pastries. Staple gelato flavors like the Nutty Squirrel, (Imported French Caramel, organic peanuts and chocolate flakes) and Ooh La La Nocciola made with Oregon Hazelnuts remain constant, seasonal and creative selections like Candy Cane, Risogalo (homage to the traditional Greek pudding), Nonna’s Ginger Molasses Cookies and Cinnamon change with the seasons. Two or more vegan flavors, like Spiced Pear and Cranberry Orange, are always included in the menu.

The growth of the company will also allow the collection to enhance its wholesale, special event and catering options, offering custom cakes, sweets and gelato bars.
