Pacific Place, downtown Seattle’s premier destination for retail shopping, entertainment and dining, recently announced the opening of a new restaurant coming winter 2019.  HaiDiLao, an experience once described by famed Los Angeles Times Food Critic, Jonathan Gold, as the “Ferrari of Chinese hot pot restaurants,” will open at Pacific Place this winter.

Its first US location outside of California, China-based HaiDiLao offers a modern take on traditional Sichuan-style hot pot dining, also known as Shabu Shabu. Each dish is served individually with high touch, interactive tableside service, including the brand’s iconic noodle dance. Guests choose from a variety of from-scratch broths and dipping sauces, handmade noodles and choice of additional ingredients – including organic vegetables and a range of proteins such as beef, lamb, chicken and seafood.

“We’ve fused the traditional hot pot concept with China’s masters of customer service to create a truly one-of-a-kind experience,” said Cindy Lee, HaiDiLao leasing representative. “You’ll find a high quality, from scratch menu, along with VIP service and amenities like tableside entertainment.”

The opening of HaiDiLao comes as Pacific Place and the management team at Madison Marquette creates new spaces for retailers, restaurants and experiences at Seattle’s downtown shopping destination.

“We are creating a dynamic destination for Seattle by curating a collection of interactive and experiential tenants,” said Daniel Meyers, senior vice president, project management at Madison Marquette, who is spearheading the development project for the developer. “It’s an exciting time of urban growth for our city and Pacific Place is evolving to meet the changing needs of the community,” Meyers concludes.
