You may recall (you can read about it here), Chef Scott Staples, the force behind Feed Co. Burgers and Uneeda Burger partnered with Long Live the Kings (LLTK) last fall to launch a salmon alternative special to support wild salmon and steelhead recovery efforts and support sustainable fishing in the Pacific Northwest. The first “Sandwich for the Sound” was a hit and now Chef Scott Staples is at it again.

Available now, the second installation of the “Sandwich for the Sound” is a Spicy Rockfish Po’Boy. It features Pacific Rockfish, spice crusted, then dipped in buttermilk and cornmeal, fried and splashed with Louisiana Crystal hot sauce. It is served on a Kaiser bun, with a celery root and smoked Washington oyster remoulade then topped with lettuce, tomato and pickles ($14). With a goal to raise both funds and awareness for conservation and restoration efforts, twenty five percent (you read that right – 25%!!) of every sandwich sold will be donated to Long Live the Kings.
