Tony and Carolyn Scott, owners of one of the Eastside’s favorite restaurants Woodblock, announce the opening of their second establishment in Redmond, Spark Pizza. As the name suggests, Spark Pizza features wood-fired house and seasonal pizzas, charcuterie, salads, small plates, and desserts. The restaurant also offers a selection of beers, local and imported wines, and a handful of cocktails on tap.

“Our goal is to offer great pizza, in an inviting atmosphere with fantastic service,” said Tony Scott, owner, Spark Pizza and Woodblock. “We are launching with 12 house pies, along with seasonal specials based on the vegetables and other ingredients available. We do not claim to be an Italian restaurant, however. We’ve put our own American twist on some of the best kinds of Italian foods, including pizza, but we are first and foremost a pizza joint.”

Spark Pizza and Woodblock Executive Chef Savuthy “T” Dy (Rione XIII, Book Bindery) and Spark Pizza Chef de Cuisine Kyle Cole (Copine, Purple, RN74) worked closely to develop the dozen house pies. Highlights include a few twists on the classics: Honey and Spice and Everything Nice, Spark’s version of a pepperoni, is given a kick with spicy honey; The Classic Margherita with mozzarella, tomato and basil is also available with buffalo mozzarella; and their Hella Cheesy twist on classic cheese is prepared with mozzarella, gorgonzola, and house-made ricotta.

Other creative inventions include In Prosciutto of Happiness, a white pie with tomato, mozzarella, arugula, shaved parmesan and two sunny side up eggs; The Fun-Gal with wild and cultivated mushrooms, mozzarella, pecorino and uniquely tangy taleggio cheese; and Nduja Wanna featuring Laquercia nduja, tomatoes, pickled peppers, red onions and grana.

Other menu highlights include When in Rome Gnocchi, prepared classic Roman style using polenta and primed to be the ultimate Pacific Northwest comfort food; Holy Mackerel Bruschetta with a garlic aioli, egg yolks and vinegar served like a tartine, as well as hand-pulled Made to Order Mozzarella.

Inspired by Tony Scott’s make-your-own-pizza-themed, 10th birthday party, the Scotts decided to take the plunge when the right piece of real estate came along. Spark Pizza is located in a converted 1907 residential home in downtown Redmond – home to previous restaurants – with a newly refurbished “glam meets New York street art” interior and original Northwest mural art. In addition to 28 seats inside, the Scotts have added a large, covered deck ideal for seasonal outdoor dining for up to 18 people, along with a fire pit.

The Scotts and Chef T, traveled to iconic pizza restaurants in New York City, as well as Rome and Naples, Italy in late 2017 to research and perfect their own crust and pies. Eating at three to five pizza restaurants a day – from Paulie Gee’s and Roberta’s in New York City to L’Antica Pizzeria da Michele and Sorbillo’s in Naples – the team was inspired to develop Spark Pizza’s unique crust: a cross between the softer, Neapolitan-style and a crisper New York crust, which has more body to it. Combining the two has given Spark Pizza diners the best of both worlds.
