Seattle-based Columbia Hospitality announced today the inaugural Puffy Jacket Pop-Up Dining Series, a limited-time, outdoor dining experience to be held at thirteen hotels, resorts and restaurants throughout Washington and Oregon. Launching on Friday, February 19, this six-week program will encourage visitors and locals alike to bundle up and celebrate the beauty of the Pacific Northwest through rustic food and drinks in a cozy, welcoming outdoor ambiance. The pop-up will be held at The Dining Room at Salish Lodge & Spa (Snoqualmie, Wash.), Packers Kitchen + Bar at Semiahmoo Resort (Blaine, Wash.), Copperleaf Restaurant at Cedarbrook Lodge (Seattle, Wash.), Ben Paris at The State Hotel (Seattle, Wash.), Hearth at The Heathman Hotel (Kirkland, Wash.), Waterleaf Restaurant & Bar at Hotel Interurban (Tukwila, Wash.), Jetty Bar & Grille at Hotel Indigo (Everett, Wash.), JJ Hills Fresh Grill at Icicle Village (Leavenworth, Wash.), The Restaurant at Friday Harbor House (Friday Harbor, Wash.), Strikers’ Bar & Grille at Echo Falls Golf Club (Snohomish, Wash.), The Wayfarer Restaurant & Lounge (Cannon Beach, Ore.) and Public Coast Brewing Co. (Cannon Beach, Ore.).

As part of continued efforts to provide safe and inviting environments for guests, the Puffy Jacket Pop-Up menus will be available every Friday and Saturday from February 19 through March 27, featuring distinctive expressions of each restaurant’s localities, communities and experiences. In this spirit, each restraurant will offer a unique menu featuring creative versions of seasonal Pacific Northwest fare, including playful entrées, desserts and cocktails. For example, at Copperleaf Restaurant, guests will feast on a seafood beach boil alongside a 2bar Spirits whiskey flight. At The Wayfarer, diners will keep warm with Tillamook white cheddar fondue and High Tide Toddy cocktails. And at Hearth, guests will embark on a journey of foraged and harvested ingredients like local mushrooms, oysters and lamb, paired with a Pine Whiskey Sour – appropriately named the Socks & Sandals cocktail. Attendees will also receive access to exclusive experiences and settings such as s’more roasting and spiked cider sipping on the private rooftop of The State Hotel. For those searching for a longer escape, guests are invited to book a room and enjoy a weekend experience.

All participating properties will adhere to Columbia Clean, an elevated set of health, hygiene and sanitation standards, and will offer outdoor seating surrounded by warm, welcoming touches, including heat lamps, blankets and fire pits.
“We’re so excited to launch our inaugural Puffy Jacket Pop-Up series and encourage our guests to get outside to enjoy our unique settings with a bit of whimsy that embraces the natural beauty around us,” said Roy Breiman, Senior Director of Food and Beverage at Columbia Hospitality. “True Pacific Northwesterners don’t let a little rain or cold keep them inside during the winter months. Supporting local restaurants while keeping our valued hospitality teams employed and providing a safe dining option for guests is our overall goal, and our hope is that communities will rally around this concept and come out for a pop-up or two. We encourage you to grab your puffy jacket and savor the delicious bounty of our region.”

Reservations are open to the public and available to book now. Visit the Puffy Jacket Pop-Up website to view menus, learn more about each of the restaurants’ offerings or book a dining experience.
